Kadala Curry / Verkadalai curry is an easy side dish in which the dry groudnuts are pressure cooked to soft and mixed in the onion tomato spicy gravy base, flavored with mint and cilantro. The tanginess of lemon really brings out the taste of this spicy gravy. This is usually served as a side for chapathi or roti varieties. And, it would go well for dosa, idly or pooris.

Chapathi is always there a couple of times on our weekly dinner menu and our channa masala gravy usually tags with it. I have been trying to increase my protein intake for a few days now. I was browsing for ingredients that has high-protein content and I was surprised to know that the protein content in peanuts (46%) are a bit higher than chickpeas (38%). That’s how I ended up making this Kadala curry as a sidedish for chapathi instead of our usual channa masala. 😀

Usually, in kerala, kadala curry is cooked from black chick peas. In Tamil Nadu, we call most pulses as “kadala” or “kadalai“. Channa or chick peas are called kondakadalai or mookadalai  and peanuts/groundnuts are called verkadalai or nilakadalai. If you are a peanut lover, you would totally dig this kadala curry recipe. 🙂 The cooked salted peanuts were tasty just as they were and I ended up eating half of those as such (which I had planned to save for making my yummy peanut salad). Though, it’s just a onion-tomato based gravy, the flavored peanuts along with the tanginess of lemon would make the gravy extra-delicious. As much as I loved to eat bhindi fry aka okra fry, cooking “bhindi fry” was not my favorite during my initial cooking days. It was mainly because of its sticky nature and long minutes of sauteing okra in kadai with constant stirring to get the perfect okra fries. During that phase, I had made a few funny dishes in the name of bhindi fry. 😀 Hope, people who had tasted that, had quite forgotten and moved on now.  😐 Here’s the solution to the biggest okra problem ever – how to cook okras fast, tasty and non-sticky. 🙂

Pan-fried okras are good to make in small quantities. But, when you are planning to prepare in bulk for any party or get-together, baked okra is a better option that saves a lot of time. You don’t need to worry about adding curd or rice flour for making non-sticky vendaikkai fries. Just, layer the bhindi in single layer and bake. It won’t be sticky at all, when it comes out of the oven fully cooked. You can have it as such with some freshly added coconut or saute them with onions & curry powder for more flavor. So, don’t have any second thoughts on buying lady’s finger from the market fretting on its stickiness. Remember, that our baked okra recipe is there to save you. 🙂

Red Pumzpkin Curry recipe – Parangikkai masala sabzi – Mashed red pumpkin cooked with onions & chosen Indian spices – A very simple & spicy side dish cooked with mashed red pumpkin and a few chosen spices to go with rather plain/mild dishes like mor kolambu or pulao or even with Chapathi or roti varieties.

I am a picky eater. I eat very less (This doesn’t include cakes, chocolates and snacks especially mullu bonda 😀 ), but I am so choosy with my food as well as my cooking. When it comes to cooking vegetables, I have a big constraint list based on the veggies. For poriyal or side dish types, veggies like carrot, beetroot, radish, cabbage must be grated. Beans, long beans, broad beans must be chopped very thinly. Veggies like bitter gourd, turkey berry, banana flower must be cooked with dhal as “paruppusili“. For masala poriyal or karaporial, there should be onions and for plain veggie curries, there should be grated coconut finishing. 😀

I hate Mondays and the heavy downpour here just made the last Monday the worst of all. It usually takes me at least until Tuesday to get back to weekday mode. 😀 Same with my tummy. It’s still expecting something exotic that we get in restaurants over weekends. If there’s something that could solve my problem (lazy but want a special home-made meal), that would be vegetarian spaghetti. 😀 I cooked that and I totally loved it! Though the recipe works good with all varieties of spaghetti, I highly recommend using “angel hair” which has a unique taste. You have multiple choices to choose with the sauce. The seasoned pasta with the tomato sauce, soy sauce with crunchy veggies and a tinge of balsamic vinegar would make the pasta quite tasty. Adding roasted veggies instead of cooked one would give nice texture & taste in every spoon. Enjoy a hearty meal with your special home-cooked vegetarian spaghetti!!! Continue reading

Hi Folks,

Poha Recipe – Aval Upma – Quick breakfast with flattened rice, peanuts and onions – Aval Upma called as Poha in North India is an easy, simple breakfast prepared by cooking soaked flattened rice with onions and peanuts.

Normally Tamil people would have Idly/Dosa/Upma for their breakfast. But, many people would run farther whenever they hear the word ‘Upma‘.  😀 There are loads of Upma varieties – Arisi Upma, Rava Upma, Wheat rava Upma, Semiya Upma, Ragi Semiya Upma etc. They would make a proper full-supplement delicious breakfast when accompanied with matching chutney/sambhar/kothsu. They are easy to prepare and would mostly be preferred by Bachelors/Bachelorettes for breakfast. Here is one simple but delicious recipe for Aval Upma commonly referred to as POHA.

Growing up, I was never a big fan of upma varieties and never touched them. My mom would prepare dosa for me whenever she prepared upma at my home. Luckily, they never served upma in my college hostel too (Not so lucky, I could have killed a few people with my hostel IDLIES in a single hit 😐). Once I was at home for my study hols and I was reading ( ??!??!!? ) something. As I was reading, I saw my Thatha (Grandfather) rushing in and out of the dining hall very frequently munching something. He normally used to eat very less irrespective of whether he liked or not. Out of curiosity, I opened and saw what it was there in the hot pack and to my surprise, I saw steaming ‘Aval Upma’ in there. I had already had dosa then, so I rushed to tell my mom that Thatha seemed to have like it so much. My mom was so glad hearing that and then she asked me to try that. Saying that, she put a spoonful of that AVAL Upma into my mouth and that moment I realized that UPMAs are all not that bad like I had been assuming ( After started my own cooking while I was staying with my friends, UPMAs are the ones that kept me alive, that is a different story 😛). Good thing is her poha recipe is quite simple too. She prepares so many flavors of POHA (Sweet, Tamarind, Lime, Dhal flavored) all of which would be so delicious. I would post them soon for you guys.
