Sambhar Powder – Special south Indian taste maker recipe

Sambhar Powder

Sambhar powder is a flavored Indian curry powder made by roasting and grinding a few selected aromatic and healthy spices which would add taste and flavor to most of the South Indian dishes. I am not satisfied with the store bought sambar powders as they are not enough spicy and not flavored for me (worried about adulteration too:-(). So, I decided to try my atthai’s sambhar powder at home (by adjusting spices according to my taste buds) & it got a big hit. This can be prepared in mixie which is an added advantage. Sambar/Rasam/Kuzhabu would always taste extra-delicious with this freshly ground sambar powder.

Sambar Powder


Red Chillies – 3 cups heaped

Toor Dhal – 1/4 cup

Channa Dhal – 1/4 cup

Urad Dhal – 1/4 cup

Coriander seeds/Dhaniya – 3/4cup

Fenugreek – 1 tblsp

Turmeric powder – 1/8 cup

Jeera – 1/8 cup

Pepper – 1/4 cup

Mustard seeds -1/2 tblsp

Coconut – 1/2 cup

Preparation Method:

  1. Dry roast red chillies separately as they get burnt quickly.

Sambar powder-hmd12. You can roast all the dhals together until they are slightly browned.

Sambar powder-hmd33. Followed by Coriander seeds, pepper, Jeera, Fenugreek and Mustard seeds until nice aroma arises.

Sambar powder-hmd2Sambar powder-hmd44. Roast the coconut separately until it’s golden brown.

Sambar powder-hmd55. Let them cool and start grinding with red chillies, followed by the dhals, coriander seeds, pepper, jeera, Fenugreek and Mustard seeds.

Sambar powder-hmd66. Finally add turmeric powder and roasted coconut flakes to the mixture and grind them together as a coarse powder.IMG_19957. Allow it to cool down completely and store it in an air tight container.


  1. For best result roast each ingredient separately.

  2. Make sure the ingredients are cooled before you start grinding.

  3. Using clean and dry spoon for sambhar powder would give longer shelf life.
