Eggless Fluffy Pancakes
Pancake is a flat cake prepared from the batter containing milk, flour & baking powder and cooked on a hot frying pan and consumed as breakfast/dinner. It’s usually served with fruits, syrup, jam, butter & chocolate chips.
Eggless fluffy pancakes – First thing I tasted right after I stepped in US. After the long and tiresome journey, I was starving like anything and craving to find something spicy, knowing very well that I won’t get something like that in the midnight. Finally, We ended up with this sweet treat. On seeing that, I was skeptical whether it would be able to satisfy my hunger, but, surprisingly it was. This is a quick and easy breakfast that saves most of my morning tensions. It’s just a sweet version of dosa – a small hint to people who want to try it in home.

Eggless Fluffy Pancakes Recipe
Serves – 2
Makes – 7
Preparation time – 10 mins
Cooking time – 20 mins
Maida/All purpose flour- 1 cup
Baking powder – 1 tbsp
Sugar – 1 tbsp
Salt – 1/2 tsp
Vanilla Essence – 1/2 tsp
Oil – 1 tbsp
Milk – 1 cup
Pancake syrup/Butter/Honey/Whipped cream for topping
1) Mix all the dry ingredients in a bowl and give it a quick whisk. Now, add the wet ingredients and mix it gently without any lumps. Set it aside for 10 minutes.
3) Pour a ladle of the batter at the centre of the pan and do not spread the batter like we do for dosas. The batter can spread itself on its own.
