Carrot Soup

Carrot Soup – A thick, nutritious, tasty soup prepared by boiling the sliced carrots in water and blended well with chosen spices with a tinge of ginger and garlic & served warm or hot.

I have been thinking for long time to cut my caffeine intake, knowing very well how hard it would be for a hard-core coffee lover. As a first step, we switched to soups instead of coffee in the evening. What could be better than a creamy carrot soup with the flavor of ginger & garlic on a cold evening?

Carrot Soup from Homemakingdelight


Carrot – 2 cups

Onions – 1 cup

Ginger – 1 tsp

Garlic – 5-6 cloves

Jeera powder – 1/4 tsp

Coriander powder – 1/4 tsp

Salt & Pepper – as per your taste

Oil or butter – 1 tblsp

Water – 11/2 cups or as required

Preparation Method

  1. Roughly chop onions, carrot, ginger & garlic. IMG_11762. Heat oil or butter in pan & saute the veggies. Cook until the onions are translucent, add water and let it get cooked.IMG_11793. Remove from heat & allow it cool. Then transfer it to a blender or mixer grinder along with spices & puree until smooth.IMG_1180

  2. Return the pureed mixture to heat and add salt & pepper. Reheat the soup for a smoother flavor.IMG_11815. Serve it with your favorite appetizers.IMG_1185Tit-Bits

Add a tablespoon of heavy cream to the soup before serving to increase the taste & consistency.
