Rava Kesari – South Indian Pudding – Sooji pudding
Rava Kesari is a famous South Indian sweet (pudding) made from rava/sooji/semolina & sugar and flavored with cardamom. This is the easiest & the simplest sweet which you can prepare for festivals, special occasions or poojas.

Rava Kesari – South Indian Pudding – Sooji pudding Recipe
My mom prepares this rava kesari (which she is extremely good at) for all the occasions as this is favorite for all of us and we never get bored of eating that. This is a fail proof recipe and I prefer it (following her footsteps at least in this 😉), whenever I am on a run. The glazing look and the melting ghee aroma of kesari make me eat more and more every time I prepare this 🙂 🙂

Serves – 3-4
Rava (sooji) – 1/2 cup
Sugar – 1 cup
Water – 11/2 cups
Ghee – 1/2 cup
Cardamom – 1/4 tsp (powdered)
Food color (Red) – 1/4 tsp
Roasted cashews & raisins for garnishing
- Roast rava with 1/2 cup (save a few tblsps to use at the end) of ghee until it starts turning brown and keep it aside.
2. Add water in a pan (preferably non-stick) & bring it to boil. Simmer it to medium low and then add roasted rava gradually to the water. Let it get cooked.3. Add sugar and food color (optional) to the cooked rava and stir it continuously without any lumps. Then add Cardamom powder and remaining ghee and cook until it starts leaving the sides.4. Garnish it with roasted nuts and serve your yummy Kesari warm or hot.
Do not reduce the amount of water, as the rava needs to be completely cooked for the kesari to be smooth.
Fine sooji works better for rava kesari. Make sure you roast the sooji with enough ghee or you might end up with lumps in kesari.
If you still have lumps in kesari use hand blender to make it smooth.
