Stuffed Veggie Cups
“Stuffed Veggie Cups” is an easy simple snack that is prepared by stuffing veggies and cheese in bread cups and cooking in microwave and it goes well with both coffee & soup. Stuffed Veggie cup is simple, easy and healthy at the same time as it has goodness of all the vegetables along with the bread. Kids would love this stuffed veggie cups, for sure. One fine evening, I decided to make a quick snack after bored of watching TV for the whole day;) I was thinking about refreshing myself with coffee and also, I wanted to make something crunchy & a bit spicy. Bread always comes in handy for making any snack simpler & quick. Also, I prefer to have coffee with bread since my childhood days. My sister and I always fought for the first slice (as it’s slightly browned on upper side). My mom would have to open the entire packet to get the last browned one too, to keep our mouths shut.
Inspired by all the mouth-watering bread recipes, I decided to create one on my own and it has come out well, too 🙂 Hope u all enjoy the stuffed cups as much as I did 🙂
Here we go for Stuffed Veggie Cups from Home-making-delight..
Stuffed Veggie Cups – Recipe
Preparation time – 5 mins
Cooking time – 10-12 mins
Serves – 2 (3 bread per serving)
What You would need:
Bread slices – 6 (edges removed)
Onion – 1/2 cup finely chopped
Capsicum – 1/2 cup thinly sliced in small pieces
Tomato – 1/4 cup finely chopped
Cheese slices – 3 optional
Shredded Parmesan cheese – 6 tbsp
Salt – as needed
Pepper – as needed
Olive oil – to brush up bread
Dried Oregano or Cilantro – for garnishing
- Pre-heat the oven to 300 F & coat the muffin cup molds with oil or butter.
Take a tablespoon of oil in a pan & slightly roast the onion and capsicum. It enhances the flavor. You can skip this step if you wish. I would recommend not to.
- Mix the veggies together with salt & pepper.
- Insert the bread carefully into the muffin pan without tearing it.
Place half of the cheese slice (if you wish) over it. Then, add veggies & shredded Parmesan cheese along with dried oregano.
- Drizzle olive oil over the bread cups and keep it in the oven for 10-12min.
Look for the brown crust at the edges of the bread & remove it from the oven.
Serve your stuffed veggie cups hot with coffee or soup.
1) Don’t keep the bread in the oven for too long time it might become too crispy and hard to eat.
2) You can also add mushrooms, corn, spinach, bell peppers (red, orange or yellow) and olives.
