Bhindi Fry – Okra Fry – Lady’s finger Fritters

Bhindi Fry is a healthy snack prepared by coating 1/4-inch thick, circular pieces of okra  (Lady’s finger) with flavored, spicy flour and deep fried in oil. It can be served hot as a healthy crunchy snack without even any dipping sauce.

During my initial cooking days, I used to end up in fight with kadai while trying to make non-sticky okra masala. As Lady’s fingers are rich in fiber, I thought of including it in my meal in an alternative way – FRITTERS. Who can fail in preparing bhindi as fritters??? I always prepare them in bulk, as they would be quick gone into tummies in blink of an eye. It can’t retain its crunchiness if prepared in advance but that is no reason to stop me from preparing this yummy bhindi fry often. 🙂 If you are watching your calories, you can use a deep fryer (Deep fryer is an appliance that helps in frying with very less oil – Check out more on deep fryer – what/how and where to buy – here) instead of deep frying in oil. 🙂

Translation:

Lady’s finger / Okra in English is called as Vendaikkai (Vendikkai / Vendai in slang) in Tamil || Vendakka in malayalam || Benda Kayi in Telugu || Bhindi in Hindi || Bendekai / Bende in Kannada and we call this dish as Vendaikkai Masala or Vendakka Fry here.

Okra Fry – Homemaking Delight

Ingredients

Okra/Lady’s finger/ Bhindi – 4 cups (chopped)

Gram/Besan Flour – 1/2 cup

Rice Flour – 1/4 cup

Chili powder – 1 tsp

Hing/Asafoetida – 1/8 tsp

Water – 3 – 5 tblsp

Salt – as required

Oil for deep frying

Preparation Method

  1. Wash and cut the okra / Bhindi approximately 1/4 inch thin slices.IMG_23812. Mix besan & rice flour with chilli powder, salt & hing in a bowl and add the sliced okra to the mixture. Sprinkle water just to blend okra well with mixture.IMG_23603. Heat oil in a deep pan. Add the okra slices slowly into the oil once it’s hot.IMG_23624. The okras get completely fried in between 4-6 mins and then start turning brown. Drain them on a paper towel.IMG_23645. Crunchy okra fries are ready to replace your usual chips. Serve your Bhindi Fry hot with your rice or you can just eat them as snacks.. 🙂

Tit-Bits:

  1. Just coat the Lady’s fingers roughly with the flour mixture to get crispy fritters.
  1. Seeds in okra might bust, so make sure you maintain a safer distance from kadai.

  2. Bhindi Fry would lose its crispiness very soon, so consume it immediately.
