Green Gram salad – Payaru Sundal is a South Indian legume salad, in which the whole green gram/Mung bean called as (Pachai Payaru / Passi Payaru in Tamil) is cooked and seasoned with ground Indian spice mixture & coconut.
Green Gram is loaded with so many nutrients; It is rich in Vitamins, Minerals, Iron, Calcium & Potassium. My mom used to sprout the green gram and force us to eat the salad, when we were kids. Now, I am adding payaru in most of the dishes I prepare (Rice, Salad, Gravy, Adai) as it adds both health and taste to those dishes.
Sundal is a healthy, fat-free, protein-rich snack prepared by using any of the pulses (Pulses include Chana dhal, Moong dhal, Peanuts, Split Chick peas, Peas, corn, horse gram, green gram & the likes) by boiling/steam-cooking them along with a few spices & Onions/Coconut; Sundal is a mandatory prasadham (Sacred food) for Navaratri (Durga Pooja/ Dussera), Vinayagar Chathurthi and Gokulashtami.

The sixth form of Mother Durga is known as “Katyayani” who is worshipped on the sixth day of Navarathri. She was born to the most renowned and famous saint “Kata” as an avatar of Durga according to his wish and desire (Source – Internet).

Green Gram salad Recipe – Payaru Sundal Recipe
Serves – 2-3
Whole Green gram/ Pachai Payaru (Muzhu Pasi Payaru) – 1/2 cup (After soaking, it becomes thrice its volume)
Oil – 2 tblsp
Mustard seeds (kadugu) – 1 tsp
Urad dhal (Ulundhu)- 1 tsp
Hing/Asafoetida (perungayam) – 1/2 tsp
Curry leaves – few
Salt & Water as required
Roast & Grind:
Chana dhal/Bengal Gram/ Kadalai Paruppu – 2 tblsp
Coriander seeds/Dhaniya – 1 tblsp
Red chillies – 1 or 2
Coconut – 4 tblsp
- Wash & soak Green gram/ Pachai Payaru in hot water for about 3-4 hours & pressure cook it with water for 2 whistles or cook it pan until soft. Drain the water & keep it aside.
2. Dry roast the chana dal & coriander seeds followed by red chillies & coconut until they turn golden brown.3. Heat oil in a pan & temper it with mustard seeds, Urad dhal, Hing, red chilies & curry leaves. Then, add the cooked green gram & salt, saute it.4. Finally, add the ground mixture to the green gram & toss it well.5. Switch off the flame, garnish with cilantro & serve your yummy Green gram salad / Pachai Payaru Sundal with rice or as a snack.
- Adding that ground mixture to sundal is totally optional. If you want, you can skip it & add freshly grated coconut instead.
If you have slightly overcooked the green gram, then adding the ground mixture will balance the texture.
3. Add the left over ground mixture in roasted vegetable curries to enhance the taste.
