Sweet Corn Sundal
Sweet Corn sundal is a south Indian, healthy salad, in which the sweet corns are tempered and spiced up with chilies & flavored with coconut. It also makes as a savory snack for evenings. You can prepare this sundal in a jiffy, as this is the most easiest of all the sundal varieties you can prepare.
Sundal is a healthy, fat-free, protein-rich snack prepared by using any of the pulses (Pulses include Channa dhal, Split Chick peas, Peas, corn, horse gram, green gram & the likes) by boiling/steam-cooking them along with a few spices & Onions/Coconut; Sundal is a mandatory dish for Navaratri (Durga Pooja/ Dussera), Vinayagar Chathurthi and Gokulashtami.
Talking about “Navarathri” which has already commenced for this year, nine forms of Devi are worshiped. We would share what we know about those 9 days of Navaratri along with our special sundal recipe for the next few days.
Bharmacharini (who practices devout austerity) is worshiped on the second day of Navaratri. She enlightens us with great powers and divine grace in the form of magnificent embodiment of Durga. She holds a rosary in her right hand and Kamandalam (utensil filled with sacred water) in her left hand. She is blissful and endows happiness, peace & prosperity. (Source: Internet)

Sweet Corn Sundal Recipe – Cooking Pulses – Navratri Special
Serves – 2
Frozen Corn – 2 cups
Oil – 2 tsp
Mustard seeds – 1/2 tsp
Urad dhal – 1/2 tsp
Red or green chilli – 3
Hing – 1/4 tsp
Coconut – 2 tblsp
Salt as required
Curry leaves – few
- Heat oil in a pan. Once it’s hot enough, add mustard seeds and let it splutter. Then add urad dhal, chillies, hing & curry leaves and saute for a minute.2. Wash the frozen corn, drain the excessive water and add it to the pan. Add salt & let it get cooked.3. Sprinkle the coconut over the cooked corn & stir well.4. Serve it as a prasadham for navaratri or as a healthy evening snack for kids.
- Do not add water for frozen corn, as it would get cooked well easily just with the salt.
