Ulundhu Kozhukattai is a kind of Indian dumpling (Modhagam) that consists of rice flour dough wrapped around a savory, mildly spicy filling made with Urad dhal and steam cooked. I love watching my mom preparing Kozhukattai every month for chathurthi & we all preferred to have only the kozhukattai for our meal. She used to prepare so many other flavors like kara Kozhukattai (Ammini Kozhukattai)Puli Kozhukattai, Inippu Kozhukattai (Poornam Kolukattai), Modhagam (modhaga Kolukattai) and Masala Kozhukattai.

I never risked to make this urad dhal kozhukattai until my grandma boosted me to try this. Though it’s a bit of work, it is totally worthy. Urad dhal is rich in essential fatty acids so you can prepare this as a healthy evening snack for kids.

Makes – 9

Ingredients

For Stuffing:

Urad dhal (Ulundhu) – 1/4 cup

Red Chilly – 1-2

Asafoetida/Hing (Perungayam) – 1/8 tsp

Salt – as needed

Oil – 1 tsp

Mustard seeds – 1/4 tsp

Curry leaves – few

Outer Cover:

Rice Flour – 1 cup

Water  – 3/4 – 1 cup

Salt – as needed

Sesame Oil  (Gingelly oil / Nallennai) – 2 tblsp

Preparation Method:

  1. Soak Urad dhal in water for 1-11/2 hrs. Drain the water completely & grind it coarsely with salt, red chillies and Hing without adding any water.IMG_2252

  2. Spread the mixture on the Idli molds and steam cook it for 10 minutes or until its cooked.IMG_22533. Once it cools down crumble the mixture with your fingers or pulse it in a mixer grinder for once or twice.IMG_22564. Heat oil in a pan add mustard seeds, curry leaves and Red chillies (Optional) followed by the crumble dhal mixture and saute for a minute or so. Keep it aside.IMG_22585. For making the outer cover bring the water to boil until it starts bubbling vigorously. Mix salt & rice flour in a bowl and start adding the boiling water & oil slowly to make a smooth dough.IMG_22556. Make small balls (about 9) out of the dough and start flattening to form a disc with your hands or keep it in between the wax paper and press it with a flat surfaced pan.IMG_22607. Add a teaspoon of dhal stuffing in the disc and seal it carefully as shown in the pic below. Repeat the same with the rest of the dough.

  1. Steam the kozhukattai in the idli molds for about 8-10 minutes until it’s completely cooked.IMG_2263

Tit-Bits:

  1. Grease the idli mould with oil to avoid the dumplings from sticking to it.

  2. Keep the dough always covered and away from fan/AC as it might render the outer cover hard after cooking.
