Curry leaves storage – Curry leaves are highly valued as a seasoning agent in many dishes in Indian cuisine due to its aroma and healthy benefits. They are rich in iron and folic acid and help in keeping our skin intact and hair stronger.
However, storing curry leaves is an important task, when you have only a limited supply (Indian stores would give it in bunches for free). First, I tried freezing the leaves, but it spluttered a lot when I added it in hot oil. Then, my mom suggested me to sun dry (which is out of option here:( ) the curry leaves for longer shelf time. So, I came up with this idea of drying the leaves in oven and it’s really helpful to preserve the curry leaves for months. Do try this out and spice-up your dish using dried curry leaves all round the year, even when the stores run out of it :).

- Wash & dry the curry leaves in a paper towel.2. Arrange them in a baking tray & bake it at 200 F for 10 -15 mins or you can sun dry the curry leaves for 24-48 hours until it starts to turn brown.3. You can see the leaves getting a bit fried & crispier now. Let it cool down & store in an air tight container. Whatever you cook would now be so aromatic. 🙂
Have excess of curry leaves?? You can soak vendhayam (Fenugreek) and curry leaves overnight and make a paste of it which is an excellent hair mask. Do check out Hibiscus-Fenugreek-Curry leaves Hair mask which you can prepare even if you don’t have Hibiscus leaves. You can also make Karivepilai Podi or Karivepilai Thogayal. 🙂
- Toss the leaves in between for even drying.
- Make sure not to dry the leaves to brown as it would lessen the aroma.
