Ridge Gourd Rice Mix – Peerkangai Toordhal Thogayal
Ridge Gourd / Peerkangai Toor dhal Thogayal is a rice mix prepared by roasting ridge gourd with dhal, garlic & red chilies and ground to a fine smooth paste. This spice flavored Indian vegetable spread is well accompanied with Rice & Rasam topped with some ghee.
I guess most of you would have been familiar with our Peerkangai Thovayal version with Urad dhal. This recipe is similar to that one except that urad dhal has been replaced with toor dhal and garlic. I am not much into Thogayal/ Thuvayal varieties and I won’t make it unless I find a reason for serving it in meal. But, there is a first time for everything and I have already made Ridge gourd rice mix twice for this week :-D. My pepper rasam tasted yum with Peerkangai Thogayal and ghee-flavored rice. So, don’t try to judge this vegetable by its appearance and do give it a try!!!
Ridge gourd is called as Peerkangai in Tamil, Tori / Thurai in Hindi, Beerakaya in Telugu, Peechinga in Malayalam & Heerakai in Kannada. It is green in color with sharp edges/lines all over it. Pirkangai thuvayal (Thick Chutney) is a simple Rice-Mix prepared by cooking ridge gourd and grinding it with either Urad dhal / Toor dhal along with spices. This is very easy to prepare and would be very tasty, if you have it with hot steaming rice and ghee/ gingelly oil. 🙂

Ridge Gourd Rice Mix – Peerkangai Toordhal Thogayal Recipe
Serves 1 or 2
Peerkangai – 1 cup (Chopped into cubes)
Toor dhal – 1 tblsp
Garlic – 2
Red chilly – 2
Oil – 1 tblsp
Salt as needed
- Wash and remove the spike skin edges from the ridge gourd and chop them into small pieces.2. Add a tablespoon of oil in a hot pan and roast the chopped ridge gourd until it starts turning brown.3. In the same pan roast toor dhal until golden brown. Switch off the flame, add red chilies & garlic to the pan and saute for a minute or so.4. Once all the roasted ingredients are cooled down grind them all together with salt in a mixer grinder to a fine smooth paste. Sprinkle water if needed. Most people prepare Thuvayal as a coarse mixture, but I prefer it smooth. It’s upto you to grind it into smooth/coarse paste.

- Make sure to toss the ingredients well while roasting.
- Do not add water before grinding. Sprinkle it if required to make a smooth paste.
- This beerkanga thovyal would go well with Idlies/dosas too.
