Snake Gourd Fritters – Pudalangai Bajji is an easy, Indian tea time snack or an accompaniment (for Rice) prepared by dipping ring-cut snake gourd pieces in batter & deep frying in oil. As it’s hard for me to find fresh snake gourds (except frozen) in the vegetable shops here, snake gourds had been long forgotten until my mom told me that she was making this Pudalangai Bajji for my brother. My brother has a special liking for deep fried snacks and he will try all the new dishes that are deep fried. My mom prepares fries out of most vegetables to please his palates including snake gourd, bitter gourd, okra – vendaikkai, brinjal etc. This pudalanga bajji was a great hit in my place. Though, it turns soggier soon and can not be prepared in advance, it tastes good when eaten hot and/or accompanied with rice varieties. Try this easy fritters for your next meal or coffee time snack and get thumbs ups from your diners. 😉

Serves – 2


Snake Gourd – 2 cups (ring-cut as in pics)

Besan/Gram Flour – 1/2 cup

Rice Flour – 1/4 cup

Baking Soda – 1/4 tsp (optional)

Chili Powder – 1 tsp

Salt – 1/2 tsp or as required

Water as required

Oil for deep frying

Preparation Method:

  1. Wash and cut the snake gourd horizontally in the form of rings or wash & pat dry them if you are using frozen.Snake Gourd Fritters-HMD12. Mix gram & rice flour with chili powder, baking soda & salt and make a thick smooth  batter without any lumps by slowly adding water.Snake Gourd Fritters-HMD23. Heat enough oil in a kadai or deep pan. Once it is hot enough to fry, dip the snake gourd rings in the batter and drop in oil separately.Snake Gourd Fritters-HMD34. Make sure to cook them on both sides until it’s golden brown and drain them on a paper towel.Snake Gourd Fritters-HMD45. Serve your hot and crispy snake gourd fries with plain rice, variety rice or as a evening coffee-time snack with ketchup. 🙂Snake Gourd Fritters-HMD5

  1. If you are using frozen snake gourd, look for ice crystals before mixing it with batter and pat dry them well.
  2. Try to make the batter a bit thicker for better holding of ring fritters in oil.
  3. Serve it hot or warm as this pudalanga fry may lose its crunchiness soon.
  4. Make sure to cook in medium flame for the vegetable to get cooked.
