With our plans to move to a new house, I prioritized the usage of stored refrigerator supplies to minimize wastage. The first thing that caught my eye was the frozen bananas which I kept earlier that week (still finding out why..). I always wanted to try out baking the banana muffins that I get from my grocery store. With our cousin coming over for the weekend and bananas in hand, I thought it’s time to make that happen. 🙂

This eggless banana cake is very easy to prepare and the bananas make the cake more moist & soft. The aroma of the banana walnut cake getting baked in my kitchen was a real delight. 🙂 I highly recommend to consume this muffin-type fruit cake within 3-4 days and maintain them at room temperature.

Makes 10-12 Slices


All purpose Flour – 1 cup

Sugar – 3/4 – 1 cup

Baking Soda – 1/2 tsp

Baking Powder – 1 & 1/4 tsp

Salt – 1/4 tsp

Banana – 1 Cup (Mashed or Pureed)

Curd or Yogurt – 1/2 cup (room temperature)

Cooking oil – 1/2 cup

Vanilla Extract – 1 tsp

Walnut – 1/2 cup (Chopped)

For Topping:

Chocolate Syrup

Chopped Walnut

Preparation Method:

  1. Sieve all purpose flour, baking soda & baking powder and mix together with salt & sugar in a bowl.Banana Hazelnut Cake-HMD12. Add the wet ingredients – mashed banana, yogurt & vanilla extract in another bowl and mix well. Finally, add oil and whisk them together.Banana Hazelnut Cake-HMD23. Slowly add the flour mixture to the wet ingredients and mix them along with chopped walnuts until they are well blended.Banana Hazelnut Cake-HMD34. Transfer the cake batter to a well greased pan and bake it at 350 F for 40-50 minutes or until the tooth pick comes out clean.Banana Hazelnut Cake-HMD45. Let it cool down.   1. I want my cake to be smooth so I pureed the bananas in blender. If you like chunks, then just mash the bananas.
  2. For transferring the cake to a platter, run the knife around the cake pan before inverting the pan upside down.
