Pita Pockets Sandwich with Sweet Potato Patty
Pita Pockets sandwich is an easy breakfast / lunch / snack in which the ready-made pita pockets are stuffed with any tasty patties and healthy veggies. We have used sweet potato patty & roasted vegetables as stuffing in this pita pockets recipe.
Pita bread, a form of round pocket bread, is a staple in many of the countries. The steam that normally puffs up our usual bread varieties is permitted to cool and flatten in the pita breads to make pockets in the middle. Pita bread is quite popular in the west as its pockets are filled with tasty servings while making sandwiches.
There would be less work involved in making pita pocket sandwiches as pita pockets are available ready made. You can choose your own ingredients – veggies, sauce, mayonnaise, patties to suit your taste. Pita Pockets Sandwich with Sweet Potato Patty Recipe
Pita Pockets – 2
Sweet Potato – 1 cup (Cooked and mashed)
Onion – 1/2 cup (finely chopped)
Green chilly – 2 (finely chopped)
Cilantro / Coriander leaves- 2 tblsp (finely chopped)
Salt as required
Onion & Capsicum – 1 cup (thinly sliced)
Tomato – 4 slices
Lettuce – 2 large leaves
Cheese – 2 slices
Tomato Sauce (or) Mayonnaise – as preferred
- Boil or pressure cook the sweet potato until it turns soft and then mash it to a smooth paste.2. Add Onions, green chilly, cilantro & salt to the potato paste & mix them well together.3. Divide this dough into equal portions to make flat patties and cook it on a heated pan or a grill greased with oil.4. Flip & cook it on the other side until it starts browning at the edges. You can keep the cheese slice on top of the patty to get it melted without getting messy.5. Toast both sides of the pita pockets slightly on a heated grill or pan.6. For the fun arranging part, place the cooked patty (with the melted cheese) along with other stuffing ingredients like onion, tomato & capsicum. Place mayonnaise on top and then wrap those in the lettuce to hold them together.7. Place the lettuce wrapped stuffing inside the pita pocket & fill the gap with the remaining sliced veggies.8. Enjoy your yummy sweet potato flavored Pita Pockets sandwich with your kids. 🙂
- Sauteing the vegetable stuffing (Sliced Onion, Tomato & Capsicum) with salt & pepper gives more flavor than adding plain veggies.
- You can use the sweet potato patties to make burger or bread sandwiches instead of pita pockets.
- If you are not able to put the mashed potatoes in shape, then adding bread crumbs will help you make better shaped patties.
