Ras Poli Recipe – Dessert made from left-over phulkas – Kids Special
Ras Poli is an easy & quick dessert prepared by adding bite sized pieces of Indian wheat flat bread, chapathi or phulka in boiling milk & sugar and flavoring it with cardamom & saffron. How would you like making a dessert out of left-over phulkas? 😉
We have been discussing about the Better Butter’s ‘cook from a book contest’ over phone (Though we dint apply for that :|). It’s all about adapting a recipe from a cookbook/magazine and promoting that. The first thing that I saw after reading this was a piece from an age old magazine on this ‘Ras Poli‘ recipe. Much to my surprise, this dessert doesn’t need any great effort to make, when you have prepared phulkas for your meal already and some is left-over yet.
You can also make this Ras poli with left over chapathis. With the addition of milk & saffron, Ras Poli will surely give you the satisfaction of having a delightful dessert after a spicy dinner. You can make this sweet as dinner for kids without any guilt as it’s quite healthy. This recipe was published by Rajeev Chipre in “The Hindu” .

Ras Poli Recipe – Dessert made from left-over phulkas – Kids Special Recipe
Serves 2 or 3
Chapathi or Phulka – 4 nos
Milk – 2 cups
Sugar – 5 tblsp
Saffron strands – 1/4 tsp
Cardamom – 1/4 tsp (powdered)
Roasted nuts – 1 or 2 tblsp chopped (optional)
- Add saffron strands to 1/4 cup of warm milk and keep it aside.2. Heat the remaining in the heavy bottomed pan and bring it to boil. Simmer it down, add sugar, stir well and let the milk continue to boil.3. Chop the chapathis/phulkas into bite size pieces and add them to the boiling milk. Stir well and let it boil again. (I have cut the pieces a bit bigger. You can cut them into little pieces).4. Finally, add cardamom powder & saffron milk and mix it well. Switch off the flame once it reaches the desired consistency.5. Garnish your ras poli – with nuts and your yummy easy dessert is ready to be served hot. Add more milk and less chapathis (cut into very thin, small pieces), if you would like to serve it as Kheer.Tit-Bits:
- For better results, heat saffron held over the flame on a spoon before adding it to warm milk.
- Make sure you cook the chapathis without any oil for making ras poli. Phulkas are preferred.
- Consume it immediately. Or, the phulka pieces would absorb all the milk.
