Hey there,

Stir Fried Bhindi – Pan fried Okras with caramelized onions – A great accompaniment for rice and roti in which stir fried okras (Bhindi/ lady’s finger vegetable/ vendaikkai) are mixed with caramelized onions and chosen spices. This health packed side dish goes well with roti, chapathi and rice. The making process is quite simple and if you are an okra fan, you would totally love this dish. 🙂

As a practice, most of us take new year resolutions every year. So did I. Few people would adhere to those and the rest would forget in a few days. I belong to the latter community. Well, it’s been 4 months since 2017 commenced. My resolutions were to blog more frequently, to exercise a bit and to keep the things back in the places where I took those from. I failed to follow all of mine. 🙁 Ufff!! And, I have heard people say it would become a practice, if we do anything for 21 days in a row. So, here’s my new short term resolution to blog continuously for 21 days and then I would see whether it would become a practice. 😀 I am starting this one 12th April and let’s see where I would be on second of May (2017, of course 😀 ). As you would have seen, most recipes from this blog would be our mom’s or grandma’s or a friend’s or a relative’s. Few would be our own recipes that we stumbled on while cooking something else. We have even tried to figure out a few dishes we tried at the restaurants in our blog. But, I have been thinking it would be great if we could try a few from any great cookbooks so that it would be a great learning for me. I got this cookbook from the nearby library – ‘Made in India’ by Meera Sodha and I think it’s just awesome. 🙂 Kudos to the author. This pan fried okra with caramelized onions is adapted from this cookbook. I just loved this okra curry, thanks to Meera and I hope you would also like it. 🙂 I also prepared the warm yogurt sauce she had suggested as a topping/side to this bhindi curry. The combination was so good. I hope my next post would be that. 😀

While getting cooked, okras can become very gloppy and sticky. To avoid the stickiness of bhindi, we should see to that there should not be any moisture. That’s why we don’t wash lady’s fingers just before cooking. If you have to, then we have to wipe it dry using a dry and clean cloth. Also, we can add okras to the pan in such a way that it is not crowded. All the bhindi pieces must touch the bottom of the pan. This would help in preventing the vendaikkai from being sticky. Okay!! Pan Fried Okras | Bhindi Fry | Stir Fried Bhindi | Lady’s finger curry | Vendaikka masala | Vendikkai masala curry | Vendai poriyal | Vendakka curry | Bhindi sabzi | Bendekai sabji | Bende subzi | Stir fried okras with onions | Indian okra curry recipe

Ingredients:

  1. Okra ( Bhindi / lady’s finger veggie) – 250 gms
  2. Onion (very big) – 1 (You can use 2 medium ones also)
  3. Oil – 5 tbsp
  4. Mustard seeds –  1 tsp
  5. Turmeric powder – 1 tsp
  6. Red chilly powder – 2 tsp
  7. Salt to taste
  8. Ginger garlic paste – 1 tsp (or crush together an inch piece of ginger & 6 garlic cloves)
  9. Cumin powder – 1 tsp
  10. Cilantro – To garnish (Optional)

Preparation method:

  1. Wash the okra well and wipe using a clean, dry cloth. Slit the okra horizontally  (length-wise) into 2 or 3 as in the pic.

  2. Cut the onions into thin long pieces. Heat 2 tbsp of oil in a pan and add mustard seeds. When it pops, add onions and saute well.

  3. Once the onions turn soft, add ginger garlic paste, cumin powder, red chilly powder and turmeric powder and mix well. Cook until the onion turns golden brown or caramelized. Keep it aside.

  4. Wipe the same pan and add 2 tbsp of oil. Add the cut okras and add salt. Saute well until it’s well cooked (It should be crispy on the outside and soft inside). Let the okras be not crowded in the pan. Ensure that all the okra pieces are touching the bottom of the pan. Use a wide bottomed pan, if possible. For 250 gms of Bhindi, I had to do this in 3 batches as my pan is a narrow one. Add oil as needed.

  5. Once cooked, add the okras to the onions. Repeat until the okras are done.

  6. Mix the cooked onion and okra well. Serve your tasty pan fried okras hot with your rotis garnished with warm yogurt sauce and peas pulao. 🙂

Notes:

  1. Wipe the okra dry before cutting. If it’s wet, it would become very sticky while cooking.
  2. While pan-frying the okras, ensure that it’s not crowded. All the pieces should be touching the pan. Keep in simmer mode while doing this. It took me around 6-8 minutes for this.
  3. Adding more onions would enhance the taste. Please don’t reduce the onion quantity. Adjust the red chilly powder to your preference.
  4. Spread the warm yogurt sauce on top of the pan fried okras just before serving. Please don’t mix it well ahead.
  5. This pan fried okras with caramelized onions would go well with rotis, paranthas, naan and rumali roti varieties. 🙂 You can pair this up with Jeera pulao, peas pulao or simple rice. 🙂
