Red Pepper Sauce Mac and Cheese – Baked Macaroni and cheese – Delicious cheesy dish prepared by cooking macaroni in roasted red bell pepper sauce, topped with cheese & bread crumbs which is then baked to form a crunchy golden layer on top with cheesy middle layers. This Mac and Cheese is of English origin and is world famous.
All I ever tasted was the traditional mac and cheese prepared with alfredo sauce and it tasted a bit bland with just salt & pepper (Ouch!! I guess I jot hit by mac and cheese lovers). May be, I was so used to it and it has become boring. 😐 Few days back, I saw a recipe of roasted red pepper sauce prepared for spaghetti on a TV show. The timing was great. My cousin had just then surprised me with a new casserole dish and I had just all the inspiration needed. 😀 I adapted the recipe to make my version of mac and cheese. The thick roasted red pepper sauce adds a special flavor to macaroni. The taste of the crunchy golden top with the soft sweet pepper flavored macaroni with bursting cheesy layers would just blow you away!! Red Pepper Sauce baked Mac and Cheese Recipe
Serves 3 or 4
Butter – 2 tblsp
Maida – 2 tblsp
Pasta – 2 cups
Vegetables – 1 cup (cooked) – Optional
Mozerella Cheese – 1 cup (shredded)
Bread crumbs – 1/2 cup
Oregano – 1/4 tsp
Salt & Water as required
Red Pepper Sauce:
Red peppers – 2
Onion – 1/2 cup (roughly chopped)
Garlic – 3
Red Chilly or chilly flakes – 1 or 1 tsp
Pepper – 1 tsp
Milk – 1 cup (boiled & cooled)
- Pre-heat the oven at 450 F. Slice the red bell peppers & arrange them in a baking tray. Toss them with oil and bake for 30 minutes or until charred. You can do the same in a pan on a stove top.2. Heat a tsp of butter in a pan, add chopped onion & garlic and saute them until it turns golden brown. Let it cool.3. In a blender, add roasted red peppers, sauteed onion, garlic, red chilly, salt, pepper & milk and puree them to a fine blended sauce.4. Heat butter in a pan, add maida and roast it for a minute. Then, add the pureed mixture and bring it to boil to thicken it a little. Switch off the flame. Cook pasta as per the instruction in the box.5. Transfer the cooked pasta into the thickened sauce, add vegetables and mix it well.6. Transfer it to a greased 2qt casserole dish. Top it with shredded cheese, bread crumbs & oregano and spray some oil on top.7. Bake it at 350 F for about 20 minutes or until the cheese starts to melt & bubble with golden brown crust on top.8. - You can also use corn flour instead of Maida. Just add corn flour to the blender while pureeing the sauce.
- If you are in a hurry (or hungry), bake the mac & cheese in two different dishes to get the golden crust soon.
