Vegetable Dum Biryani – Easy Hyderabadi special Briyani

Vegetable Dum Biryani is a spicy rice dish in which the rice and vegetables are half-cooked separately and then dum cooked (or steam cooked) together on low flame forming layering in a deep vessel so that the aroma sinks into the rice. Meal for two or for a crowd??? This single pot dish is perfect for lunch, picnic, dinner party or get-together.

As you all know there is a difference between our usual veg briyani and vegetable dum briyani. For veg biryani, the rice and veggies are cooked together along with the spices and for the latter, they are steam cooked in layers at low flame for the flavors to get absorbed into the rice while cooking. The way dum briyani looks is just a feast for the eyes. Orange and yellow colors of saffron, long white basmati rice and a portion of gravy-mixed rice along with fried onions with a hint of mint & coriander leaves would be very tempting to look at 🙂 I just love the way our vegetable dum briyani is served – colorful & yummy.

Nowadays, ‘Briyani’ is served during dinner at most wedding receptions in India. If you are hosting a get-together or a party and wondering what to cook, I would strongly recommend a briyani. It’s favorite for most people, easy to cook, time saving and is always a special dish. Simple raita would go well with this. If you plan for fried rice or pulao, then a special gravy or dhal is required. But, if it’s your special vegetable dum biryani, it would already be spicy and special enough for your party. Pair it up with potato chips & garlic raita. May be, you can add a paneer fry or gobi pakoras followed by hot gulab jamuns with ice cream. Your party would just be perfect and easy for you as well. 🙂

After, a few bumps here and there, I finally got my hyderabadi vegetable dum biryani perfect that is close to the restaurant style dum briyani in appearance and taste. I hope you all like this. Vegetable Dum Biryani – Easy Hyderabadi special Briyani Recipe

Serves 2


Biryani Rice – 1 cup

Cinnamon Stick – 1/2  + 1/2 inch

Cloves – 4

Bay leaf – 2

Salt & water as required

Fried Onion

Onion – 1 cup (finely sliced)

Corn Flour – 2 tblsp

Salt – 1/4 tsp

For Gravy

Mixed Vegetable – 1 & 1/2 cup (chopped) (carrot,beans, peas, corn, cauliflower, brocolli, potato)

Oil or Butter – 3 tblsp

Green chilly – 2 (slit)

Chili powder – 1 tsp

Coriander powder – 3/4 tsp

Turmeric powder – 1/2 tsp

Jeera powder – 1/2 tsp

Biryani Masala powder – 2-3 tblsp

Curd – 1/3 cup

Saffron Milk – 3 tblsp

Mint & Coriander leaves – 1/3 cup (finely chopped)

Water – 3/4 cup

Salt as required

Preparation Method:

  1. Wash and soak the briyani rice for 15-20 minutes and cook it with salt, cinnamon stick, cloves, bay leaf & enough water. Drain the excess water once it’s 3/4 th done.2. To make fried onions, mix the sliced onions, cornflour & salt in a bowl and let it sit for 10 minutes.3. Heat enough oil in a pan and fry the onions in portions until they turn golden brown in medium flame. Drain them on a paper towel.4. For making the gravy, heat a deep pan or cooker with oil, add whole spices (cinnamon stick, cloves, bay leaf), followed by the vegetables. Then, add the spice powder (Chilli, turmeric, coriander, jeera & briyani) and saute them until the raw smell goes off.5. Add curd and mix it well. Then, add water & salt, bring it to boil and let the vegetables get cooked.6. Once, the veggies are half done, start arranging the layers with rice, mint & coriander, fried onions & a tblsp of saffron milk. Repeat the layers with the left over rice.7. Cover the pan with a moist towel and seal the top with foil or place a heavy utensil on the lid. This would not allow the steam to escape and this is when your vegetable dum biryani gets special. Place it on a tawa and cook for 5-7 minutes on a medium flame and 5 minutes on low flame.8. Serve your vegetable dum briyani the hot or warm arranging in layers of rice & gravy with raita, chips or briyani gravy.   1. You can add roasted nuts, raisins and paneer for more flavor to your vegetable dum biryani.
  2. Look out for flames while covering the pan with moist towel or tissue.
  3. Cooking time of dum varies depends on the thickness of the vessel. Make sure not to burn the bottom. Check around the edges with spatula in between.
