Warm yogurt sauce recipe – Easy Besan Yogurt Dip – Chickpea and yoghurt dip is a very easy to whip out  ‘warm dip’ or ‘warm sauce’ made from yogurt and chickpea flour. It serves as a great accompaniment for anything spicy ranging from any briyani, aloo tikki, fries, pan-fried bhindi curry, a few chaat items, nuggets, smileys etc. 🙂 You can make this out of curd also. Let me give it a desi name then. You can call this ‘Besan Raita’ or ‘Chickpea Raita‘.:| Doesn’t sound so fancy, eh??!!

As you can see, few of the posts might not be very elaborated as I keep up the spirit to cook and blog every day. 😐 But, don’t worry. I am not posting anything that is not tasty. This is one of the simple recipes that you can easily follow and prepare without any hassle. Let’s say if you have any guests come over and you have paneer tikka but you might not have time or ingredients for a mint chutney, you could totally use this recipe to manage the situation. 🙂 This simple yogurt sauce or besan raita can be prepared in a minute.

In this recipe, you can also use curd instead of yogurt. Most people assume both to be the same. But, there’s a simple difference. The difference is the bacteria culture used in the fermentation process. And, I get a lot of flavored yogurts but not flavored curd 😀 But, from what I have seen, I had replaced curd with yogurt in most recipes and it had worked for me.

This yogurt sauce goes well as a side dish or topping with kebabs, Paneer tikka, Bhindi Fry, Briyani, Aloo tikki, samosas, few chaat items, Pan fried Okras, Chilli idly, gobi manchurian, veggie fries etc. For kebabs and tikka varieties, pour a dollop of this yogurt sauce on top just before serving. For Briyani and all, you can serve on the side. For fries, it can be a dipping sauce. There’s really no need for explanation or pictures for this one. But, it’s been a convention in our blog. So, let’s just do it. 😉 And another thing, my new kitchen lighting is very bad. So, please forgive me for the bad pictures. Warm yogurt sauce recipe – Easy Besan Yogurt Dip – Besan Raita Recipe – Kadalai maavu raita – Besan Curd Pachadi – Yoghurt Dip 

Ingredients:

  1. Yogurt – 1 cup (Curd also can be used)
  2. Turmeric powder – 1/4 tsp
  3. Besan (Chickpea flour / Kadalai Maavu) – 1 tbsp
  4. Salt – to taste
  5. Red chilly powder – 1/2 tsp (Optional)

Preparation Method:

  1. Beat the yoghurt (or curd) well. Add salt, turmeric powder and besan. Mix well.

  2. Heat a pan and add this beaten mixture and keep in medium flame. Switch the flame off when it begins to bubble. Optional: Add red chilly powder in this step, if using.

  3. Serve your warm yogurt sauce or yoghurt dip with any spicy dish.

Notes:

  1. Pour the yogurt sauce as a topping to spicy dishes just before you serve. Don’t mix in advance.
  2. For briyani and other dishes for which you would be serving this yoghurt sauce as a side, you can temper it with mustard seeds in a tbsp of oil. For serving as a dip or topping, it’s not needed.
  3. Please see to that there are no lumps while mixing besan (Chick pea flour) with yogurt.

This recipe is adapted from the cookbook ‘Made in India’ by Meera Sodha as I had mentioned in my earlier posts. 🙂 I have made a very very few minor changes as well.
