Broccoli Paratha – Stuffed Paratha Recipe from Homemaking Delight

Broccoli Paratha is a healthy dish which can be served as lunch box tiffin for kids or as dinner. They would make a filling breakfast too. If you are like me then, you will always have left over broccoli florets in refrigerator (after adding a few florets in gravies or rice dishes) waiting to serve its purpose. The best way to make use of the whole broccoli florets is by making parathas. There are few broccoli haters among us because of its bitter taste. But, when you stuff seasoned broccoli using wheat flour and made parathas outta if, you won’t even get to its bland taste. Better, serve it with creamy coconut gravy or cashew based gravy (like cashew-capsicum white khorma). you will start to fall in love with the Broccoli Parathas. 🙂

  1. Broccoli is rich in both calcium & vitamin K both of which are important for bone health and prevention of osteoporosis.
  2. It’s high in fiber, which aids digestion and  prevents constipation.
  3. The presence of vitamin-C, sulphur and certain amino acids make broccoli a very good dextoxifier.

Broccoli Paratha Recipe – Stuffed Paratha Recipe

Makes 10

Ingredients:

Wheat Flour – 2 cups

Broccoli – 2 cups

Onion – 1/2 cup

Jeera or Cumin seeds – 1 tsp

Turmeric Powder – 1/4 tsp

Chili powder – 1/2 tsp

Coriander powder – 1/2 tsp

Oil or butter for cooking

Salt & Water as required

Preparation Method:

  1. Mix wheat flour with salt & knead it into a dough by adding warm water gradually. Add a tablespoon of oil to make it smooth. Divide the dough into 20 equal sized balls and keep it covered. You can check here on how to knead dough.2. Wash and place the broccoli florets in boiling water for 5-7 minutes. Drain the water and mash it or mince it in the mixer grinder with a quick pulse.3. Heat oil in a kadai or pan. Add cumin seeds followed by chopped onion and saute them until it turns golden brown.4. Then, add cooked broccoli florets along with turmeric, chili, coriander powder & salt and saute them until the raw smell goes off. Switch off the flame and let it cool.5. Spread the wheat flour balls into a round disc with the rolling pan and place 1-2 tblsp of stuffing in the middle.6. Cover the stuffing with another disc, seal the ends by pressing it together and spread the stuffed disc smoothly with rolling pin to make stuffed chapathis.7. Once the tawa is hot enough, place the paratha on it. Add a tsp of oil or ghee and allow it to get cooked on both sides until the brown spots appear.8.Serve your yummy healthy broccoli paratha hot with curd, pickle or golden garlic raita. 🙂Tit-Bits:
  1. For making the stuffed dough, you can also make packets (like stuffed dumplings) by keeping the stuffing inside the dough ball and spread it together to make the parathas.
  2. If your kids hate broccoli but you would love to include, then mix half of it with cauliflower and they won’t even know it.
  3. Don’t over cook the broccoli florets in boiling water. If possible steam cook it to prevent the loss of nutrients.
